Roast beef with plums
I'm not a big fan of combining meat with fruit, but even I found this dish delicious, and if you like such combinations, you'll definitely appreciate it. Tender meat with a light flavor of plums and a delicious gravy. Cooking roast is easy, though it takes a long time. Recipe from the book "Fruit" series "Good Kitchen".
Constituents (for 4-6 servings):
- beef for braising - 1 kg
- large strong plums - 1 kg
- dry red wine - 250 ml
- honey (to taste) - 1-2 tbsp.
- butter - 30 gr.
- vegetable oil - 2-3 tbsp.
- onion of medium size - 3 pcs.
- oregano pepper - 5-6 peas
- red wine vinegar - 2 tbsp.
- yogurt or sour cream - 250 ml
- corn flour or starch - 2 tbsp .
- salt - to taste
Cooking:
The most suitable parts of beef for braising are the knuckle, shoulder and leg.
Cut the beef into 3.5 cm slices.
Cut onions into rings or half rings.
Clean the plums from the pips, put them in a saucepan, pour wine (and, if desired, honey) and stew until softened - about 5 minutes. If the pips are poorly separated, then first stew the plums, and then peel them from the pips. Drain the liquid in which the plums were stewed and save it.
Pour 2 tbsp of vegetable oil into a skillet, melt butter in it, and fry the pieces of meat.
Transfer the meat to a glass or cast iron pan. In the same skillet, adding a little vegetable oil if necessary, fry the onions until they are soft.
Add the onions to the pan.
Put the onions in with the meat. Rinse the skillet with the liquid in which the plums were stewed, and pour this sauce over the meat.
Add the oregano pepper and wine vinegar and mix thoroughly.
Cover the pot with a lid and braise the roast in the oven at 180 degrees Celsius for about 1.5 hours, until the meat is tender.
Then add yogurt or sour cream to the meat, pour cornmeal or starch diluted in 4 tbsp of water, salt to taste, and place the plums on top of the meat.
Add the plums to the meat.
Cover the pot with a lid and braise the roast for another 15 minutes.I cooked half a portion and the roast turned out quite a lot.
This roast is delicious with mashed potatoes.
