Zucchini caviar in the multicooker
For many people, store-bought zucchini caviar is somehow the most delicious. I am no exception. However, the caviar made according to a recipe I learned from a very nice girl Irina turned out to be even tastier! And it is easy to prepare! Be sure to try to cook this tender and delicious caviar!
Constituents (for a 2.5 liter multicooker):
- zucchini - 1 kg
- carrots - 2 pcs.
- onion - 1-2 pcs.
- tomato - 2 pcs.
- sweet pepper (green) - 3 pcs.
- garlic - 5-6 cloves
- tomato paste - 2-3 tbsp.
- odorless sunflower oil - 3 tbsp.
- salt, pepper - to taste
- dried dill
Cooking:
Clean the vegetables. Cut onions, carrots, zucchini and peppers into small cubes.
Pour sunflower oil into the pot of the multicooker, put the chopped vegetables and add dill, salt and pepper to taste.

Cook in "stew" mode for 1 hour.
After the multicooker turns off, add tomato paste, chopped garlic and tomatoes to the pot.
Mix everything together and cook in "pilaf" mode until excess liquid evaporates - about 1.5 hours, stirring the vegetables two or three times during the cooking process. (I didn't wait for the multicooker to finish the "pilaf" program, but turned it off when the excess moisture had sufficiently evaporated).
Then transfer the stewed vegetables to a blender and chop. Refrigerate the finished caviar and serve.
And serve.
Caviar can be stored in the refrigerator for several days.
