Jamie Oliver's pork and cider stew.
A very cozy, homemade dish that is also quite nutritious. It's simple and affordable, but it always turns out well. A tasty stew with crusty bread or vegetables - what more do you need for a hearty lunch? Recipe from Jamie Oliver's book "Ministry of Nutrition"
Composition:
- celery stalks - 2 pcs.
- onion - 2 pcs. of medium size
- carrots - 2 pcs.
- vegetable oil
- flour - 1 tbsp. with a slide
- tomatoes in their own juice - 400 gr.
- pork - 500 gr.
- semi-dry cider - 500 ml
- sage - 3 sprigs
- salt, freshly ground pepper - to taste
Cooking:
The stew can be cooked on the stove or in the oven. If you decide to cook in the oven, you need to preheat it to 200 degrees.
Dice the pork into cubes with a side of about 2 cm.
Chop the celery, onion and carrots coarsely. Put a cast iron or a pot with thick walls on medium heat. Splash a little vegetable oil into the pot, put the vegetables and spicy herbs and fry for 10 minutes.
Add the meat and flour and stir to combine.
Pour in the cider.
Add the tomatoes and mash them with a fork.
Mix thoroughly and season with salt and pepper to taste.
If cooking in the oven, put the stew in the oven and cook for 2.5 hours. If cooking on the stove, bring the stew to a boil, cover with a lid and cook for 2.5 hours. For the last half hour of stewing, remove the lid.
Serve with a side of vegetables, potatoes or crispy toast.
