Fish baked with vegetables
There are endless variations of cooking fish with vegetables - it all depends on the contents of your fridge, your tastes and the time you have available. I had to make a dinner of fish, I had some vegetables in the fridge, and this is what I ended up with. I should note that the vegetables were eaten almost faster than the fish.
Composition:
- hake or other boneless fish - 3 pcs.
- carrots - 2 pcs.
- onion - 2 pcs.
- tomatoes - 3 pcs.
- zucchini - 1 pcs.
- garlic - 3 cloves
- salt, pepper - to taste
- sunflower oil - 2 tbsp.
Preparation of fish baked with vegetables:
Clean the fish and cut into 4-5 cm long slices.
Clean the vegetables, finely chop the onion and garlic, dice the zucchini and tomatoes, and slice the carrots into ribbons with a vegetable peeler.
Lightly grease a baking tray with sunflower oil, place zucchini in it, top with fish, then cover everything with onion and carrot.
Salt and pepper the fish and vegetables and drizzle with sunflower oil.
Bake in an oven heated to 180 degrees Celsius for about 30 minutes.
Bake the fish and vegetables in a preheated oven.
Then top with the tomatoes and garlic and return to the oven for another 10-15 minutes.
Add the tomatoes and garlic to the top and return to the oven for another 10-15 minutes.
Serve with mashed potatoes.
