Chebureks on a dry pan (yantyk)
Chebureks – they are very tasty, but also very caloric, you can't eat much! And I love them! And once my friend Sevila told me that Crimean Tatars cook chebureks on a dry frying pan, then they turn out less fatty, because they do not float in boiling oil, and this makes them healthier.
I confess that there are no proportions of the dough as such, I mixed the dough «by eye» but everything is simple, the main thing is to get the desired soft and elastic consistency. Shall we?
Composition:
batter:
- water – 0,5-1 tbsp.
- flour – 2 tbsp.
- salt – a pinch
stuffing:
- stuffing (pork+beef) – 500 gr.
- onion – 1 pc.
- dill greens – bundle
- salt, pepper – to taste
- soda – 0,5 tbsp.
- cream butter
Cooking chebureks on a dry pan:
In a bowl, sift the flour and mix it with salt. Then gradually pour in the water in small portions and knead the dough.

The dough should be smooth, elastic. The amount of water depends on the quality of the flour, it can take from 0,5 to 1 tbsp.
Place the dough in a bowl, cover with a towel and let rest.
In the meantime, prepare the mince. Put the meat and onion through a meat grinder, add finely chopped dill, salt and pepper.
Pour water into the mince (it will add juiciness to the stuffing) and mix everything together.
Pinch off a small piece of dough and roll out thinly. Spread the filling in a semicircle on one side of the dough, about 1cm from the edge.
Place the filling on one side of the dough.
Moisten the edge of the dough with water, then cover with the second «loose» half of the dough and pinch the edges.
I find it convenient to go over the edge with a saucer bezel, it sticks the edges together and trims off the excess.
Fry the chebureks on both sides in a dry skillet over medium heat, covered with a lid, until browned.

Place the finished chebureks on a platter, brush the top with butter and serve.
It's delicious with tomato and cucumber salad!
