Fish cutlets
I already have Fish cutlets from Jamie Oliver and Fish sausages on my blog, but I didn't have the usual fish cutlets like our moms make. Correction. The cutlets are juicy and soft, easy and quick to prepare.
Composition:
- white fish fillets (I have saida and grenadier) – 600 gr.
- onion – 1 pc.
- baton – 3-4 slices
- egg – 1 piece + yolk
- breadcrumbs – 1-2 tbsp.
- salt, pepper, Provencal herbs
- sunflower oil for frying
- breadcrumbs
Cooking fish cutlets:
Check the fish fillets for bones. Soak the baton in milk or water.
Put the fillet and onion through a meat grinder, add the squeezed from excess moisture baton, egg and yolk, salt, pepper and herbs and mix. Pour in the breadcrumbs and mix thoroughly.
Heat the sunflower oil in a frying pan. Shape the mince into small patties, coat them in breadcrumbs and fry on medium heat on both sides.
Serve hot.
