Pork ribs in barbecue sauce based on fruit puree
This is my version of barbecue sauce. It's not a classic, but it's very tasty. You get magic ribs, even without going to the countryside, you can have a BBQ at home.
We will need (for 4-5 servings):
- 1-1.2 kg of pork ribs
for the sauce:
- 300 grams of frozen sour berries (I more often use cherries, or cherries and black currants)
- 4 tbsp. tomato ketchup (homemade or any other)
- 3 tbsp. soy sauce
- 2 tbsp. of liquid honey (about 60 grams) (*if you can't or don't want to use honey, you can replace it with brown sugar, in extreme case with regular sugar, I think 1 tbsp. will be enough)
- 3 cloves of garlic
- 1/2 tsp. black pepper
- 1/2 tsp. correander
- optional powdered chili pepper or Tabasco, you can adjust the spiciness yourself .
- 1 tbsp. Worcester sauce (you can use it without, but it tastes better) .
Cooking pork ribs in barbecue sauce:
Pork ribs are pre-boiled in salted water until soft (when the meat separates from the bone, but still holds) - about 1-1,5 hours, the time depends on the quality of meat.

Prepare the sauce. To do this, beat the cherries (or berries) without seeds with a blender into a puree and rub through a sieve, so it tastes better. Press the garlic through a press. Combine the puree, ketchup, soy sauce, honey/sugar, spices, garlic and Worcester sauce in a bowl.
To the sauce, add the boiled ribs and mix gently. Let soak for at least 30 minutes.

Then heat a frying pan and fry the ribs in a small amount of vegetable oil until browned (they fry quite quickly), then smear with the rest of the sauce and put under the grill in the oven for about 5 minutes to brown. If you don't have a grill, glaze again with the remaining sauce and grill again quickly on all sides.
If you are cooking on a grill, charcoal grill, then periodically during frying smear with the remaining sauce. If you want to use the sauce separately, sauté it on the fire for about five minutes.
